Founded in 497 AD by Ellero, born in Tuscia in 476 AD the year of the end of the Western Roman Empire. It is the second oldest abbey in history and dominated these lands of Tuscan Romagna until 1785 with its own diocese.

For centuries the abbey has been managing the lands of the Exarchate of Ravenna, including the County of Giaggiolo. It used to govern land allocation, cereal crops, mill management and taxes.

Civitella, the Molino Boscherini and the Tenuta San Stefano Monte Girone are part of the county lands of “property” of the Abbey of Sant’Ilario.

At the foot of the Abbey of Sant’Ilario are the Molino Boscherini, the company’s headquarters, and the Tenuta San Stefano Monte Girone, where the cave d’affinage dedicated to bottle refining is located.

The pure waters of the Suasia torrent flow at the foot of the Tenuta San Stefano Monte Girone and of the Molino Boscherini flowing into the Bidente river.
